I am a pastry chef and instructor at a culinary school in Vancouver, BC. Throughout my career, I have traveled Canada and the US working at many great establishments including The Inn at Little Washington, Bouchon, and Wolfgang Puck.
I guess you could say I have been teaching for years, unofficially. In the kitchen, to move “up” to a new station, you must first train the person taking your place. Every time I moved up, I first had to play the role of “teacher.” In recent years, I had the opportunity to be a part of many restaurant opening teams exploring the role of teacher again while training new employees.
I now have a very formal role as “teacher” as an instructor and to gain a better understanding of education and learning, I have again become the student. Enrolled in the Provincial Instructor Diploma program at VCC, I hope to become a better instructor to help prepare new pastry cooks as they begin the adventure of their new career.
